Easy Glazed Carrots Recipe with Maple Syrup & Walnuts | Woolworths
Quick maple glazed carrot recipe & a great side dish recipe for roast dinner. This carrot recipe also makes glazed parsnips. Prep: 10 mins | Cook: 8 mins | Serves: 8 Ingredients: 3 bunches fresh Dutch carrots, washed (see tip) 40g Woolworths Select butter, chopped ¼ cup Woolworths Select maple syrup 8 sprigs fresh thyme, leaves removed 3/4 cup Woolworths Select walnut halves, lightly toasted, chopped 2 tablespoons Woolworths Select Australian extra virgin olive oil Fresh thyme sprigs, to garnish Method: 1. Trim carrots leaving a 1cm stem on each. Bring a large saucepan of salted water to the boil, add the carrots and cook for 2 minutes or until almost tender. Drain. 2. Heat a large frying pan over a medium-high heat. Melt butter and maple syrup, add the carrots and thyme. Cook 4-5 minutes, shaking pan until carrots start to colour. Add walnuts and oil, toss to combine. Season. 3. Tip onto a platter. Garnish with thyme. Serve. Tip 1: No need to peel the carrots; just use clean unused scourers to scrub the carrots lightly to remove any dirt or small fibres. Tip 2: Regular carrots or small parsnips can be used as a substitute for Dutch carrots; peel and quarter lengthways. Tip 3: Maple syrup can be substituted with honey.
