hey everyone welcome to the kitchentoday I made these maple glazed baby
carrots this is a fantastic side dishfor just about any meal and they're
really easy easy to make here's what Idid start out with one of these heavy
cast-iron brazier pans over medium-highheat and I hit it with a little bit of
clarified butter once the butter wasmelted I threw in the baby carrots so
stir the carrots around for a littlewhile get them fried and a little bit
crispy on the outside start to build upthat caramel color and flavor and then I
pour it in a little bit of white wineexcept I didn't have white wine today so
I used some Rose a you could pretty muchuse any dry white wine that you have on
hand what you're really looking for isto add an acid component to the dish on
medium-high heat that should come to aboil and you reduce the liquid down by
about 1/2 and then you throw in somemaple syrup and you want to use real
maple syrup of course there is nosubstitute
at this point I hit it with a little bitof salt and pepper and you don't have to
use baby carrots if if you don't want toyou could use any carrots that you like
you could take regular-sized carrots andcut them into rounds cut them into bat
nets I just really like these carrotsfor presentation give it a stir around
and put the lid on and then you stickthat in the oven for 25 or 30 minutes
now this recipe is really easy to scaleyou can you can make a whole mess of
these for a whole lot of people or youcan make it just for two really nice
flavor
you've got sweetness from the carrotwhen that carmelization right at the
very beginning and then layered on topof that is the maple flavor which adds
just an incredible depth and you need awhite wine with quite a bit of acid in
order to cut that sweetness otherwise itwould be very coin so give this a try it
would be great on your Thanksgivingdinner table or your Christmas dinner
table or Easter or next Tuesday nightwhen you're having meatloaf it's the
kind of dish that makes it look like youslaved in the kitchen and worked really
hard when it is super simple and easy tomake thanks for stopping by

Carrots have a sweetness that’s released when you sauté them… then if you add maple syrup! Boom the best side dish you’ll ever eat. Ingredients: 15 - 30 mL (1 - 2 Tbsp) clarified butter*** 500 g (1 pound) baby carrots, peeled *** 125 mL (½ cup) dry white wine 30 - 45 mL (2 - 3 Tbsp) maple syrup Pinch of salt and pepper Method: Preheat oven to 200ºC (400ºF). In a heavy pan with a lid, melt the butter over medium high heat. Add the carrots to the pan and stir around until they get a nice caramel exterior. Pour in the wine, bring to a boil and stir. Reduce the wine by half and then add in the maple syrup. Add the salt and pepper, stir to coat and combine. Put on the lid and place in the oven for 20 minutes or so. *** If you don’t have clarified butter, use butter, or olive oil, or any vegetable oil. *** If you don't have or can't find these carrots; don't worry. You can use any carrot, just cut them up to the same size and you'll be fine!
